THE WINEMAKER: Dilettante is a small natural wine producer based in San Francisco that harvests their fruit from Mendocino, Sonoma, Lodi, and the Sierras. They are focused on making wine in the spirit of small European winemakers. They use hand-picked grapes and only indigenous yeast during fermentation. They add nothing in the cellar.
